Recipes for SPAM® Appreciation Week (March 4-10 2013): SPAM® & Macaroni Cheese

1 x 340g can of SPAM® Chopped Pork and Ham (diced)
1 x tablespoon of plain flour
2 x tablespoons of butter
1/4 teaspoon of mustard
240g of Macaroni
50g of breadcrumbs
1 pinch Cayenne pepper
1 pint of milk
1/4 teaspoon of Paprika
100g of cheddar cheese
1/4 teaspoon of salt
1. Heat oven to 400°F.
2. Cook macaroni according to package directions; drain
3. Heat oil in frying pan and stir fry SPAM® Chopped Pork and Ham and stir in macaroni.
4. In medium saucepan, melt one tablespoon butter. Blend in flour, salt, mustard, black pepper and cayenne until smooth. Stir in milk; cook over medium heat, stirring, until mixture thickens and boils. Add cheese; cook, stirring, until cheese is melted. Pour over SPAM® mixture; mix well
5. In heat-proof bowl, melt remaining 1 tablespoon butter; stir in breadcrumbs and paprika. Sprinkle over macaroni. Bake 20 to 25 minutes.
